Locally Grady Atkins is best known for his previous tenure at Le Gallois, where he established himself as one of Cardiff’s most esteemed chefs. More recently, he has also taken over the helm at Paysan and Bacareto in the past few years. Throughout his career, which has spanned from his hometown of Sheffield to destinations like London, Paris, Sicily, Boston, Los Angeles, and Hong Kong, one aspect has remained unwavering: his dedication to embracing local seasons and the produce they offer.
Grady’s style predominantly delivers classic dishes that highlight the essence of their ingredients and pay homage to the inherent flavours. Above all, his focus lies in treating high-quality produce with the utmost care and respect it deserves.
